Description

The entire vinification process is carried out here, from reception of the freshly pressed grape juices (known as the 'must'), to maturing in barrels or vats, and bottling.

The wines are produced using local grape varieties (Chardonnay, Viognier, Gamay and Syrah) which are carefully selected from four estates located less than 60 kilometres from the cellar.

The family, business and human adventure of Chai Saint Olive has been built on chance meetings that have turned into long relationships, including the cellar's partner winegrowers.

Raised on their terroirs, and passionate about their vines and their work, these winegrowers have adopted a responsible approach that respects nature and people.

Based on these principles, Franck and Grégoire have selected their partner winegrowers in the Rhône Valley (with Jeanne Gaillard and the Beaujolais (with Jean-Michel & Viviane Tournissoux, Christophe Subrin and Hubert Cinquin.

All year round
Opening hours on Monday between 3 pm and 7 pm. On Tuesday, Wednesday, Thursday, Friday and Saturday between 10 am and 1 pm and between 3 pm and 7 pm. except on January 1st, Easter Monday, Feast of the Ascension, May 1st, July 14th, August 15th, November 1st and December 25th.
