Sustainable gastronomy in Auvergne-Rhône-Alpes

On January 18, 2021, the Michelin Guide unveiled the list of 638 Michelin-starred restaurants in France. Michelin Green Stars, first debuted in 2020, were also attributed to 33 chefs committed to preserving our planet, including 6 new Green Stars awarded in Auvergne-Rhône-Alpes.

A sustainable approach to gastronomy

Short supply chains, permaculture vegetable gardens, composting organic waste, and respect for the land, seasons, producers, and animals: these Michelin green-starred establishments each come up with new ways to reduce their environmental footprint.

• L’Ostal, Emmanuel Hebrard, Clermont-Ferrand

A chef at heart, Emmanuel was born and raised in Auvergne. The region made him who he is today and influences his attitude in the kitchen: simple, honest, humble. He spent years working under chefs such as Edouard Loubet, Patrick Henriroux, Anne-Sophie Pic, and Stéphane Raimbault. In Burgundy, he had his first role as head chef and earned his first star alongside his staff. Returning to Auvergne was the next obvious step:

"Something was happening there, and we had to be part of it!"

Têtedoie, Christian Têtedoie, Lyon

Fruits, vegetables, herbs, courgettes, peppers, aubergines: there's a bit of everything in the vegetable gardens of Christian Têtedoie. One of the gardens is right next to the restaurant, and the other is in Collonges-au-Mont-d'Or in honour of Paul Bocuse. Produce from the gardens cover 60% of the needs of the restaurants. The chef's goal: 100% autonomy. Another issue close to his heart: replanting forgotten seeds in Rhône-Alpes, like the Bresse pepper used in his signature dish, lobster and calf's head. In addition, Christian Têtedoie follows a range of sustainable practices, including reprocessing composted organic waste by limiting methane production, sorting and recycling cardboard, plastic, paper, aluminium, and glass, as well as re-using the water from the air conditioners for the garden.
